Fond Memories of Homemade Chicken Alfredo
I have wonderful memories of preparing full-fat Chicken Alfredo from scratch for my husband when we were dating. He was living on his own and struggled with cooking. Although he excelled at household chores, he preferred simple and affordable meals.
Every day for lunch, he would have cheap bologna sandwiches without cheese on the most inexpensive store-bought white bread he could find. Thankfully, he also included lots of fruits and vegetables in his diet, which helped to balance out the low-quality ingredients.
When he visited me on weekends, I seized the opportunity to treat him to delicious meals. One of my go-to dishes was a homemade Chicken Alfredo with fettuccine. You know, the classic recipe made with heavy whipping cream and plenty of cheese? It was absolutely scrumptious, even if it was packed with calories!
A Healthier Twist on Alfredo Sauce
Fast forward a few years, and I found myself as a new mom with a few extra pounds. It finally dawned on me that I couldn’t continue eating whatever I wanted without consequences. I became concerned about the number of calories in the food I consumed.
During my search for a healthier alternative, I discovered a unique idea: making Alfredo sauce with cream cheese and milk instead of heavy whipping cream. This concept seemed not only doable but also more affordable.
After experimenting and making adjustments, I developed a healthier Alfredo sauce recipe that my family adores. It’s so delicious that you won’t even realize it’s not the classic full-fat Alfredo sauce. While it’s still not considered a health food recipe, it’s a guilt-free indulgence since it contains roughly half the calories of traditional homemade Alfredo sauce.
Compared to store-bought versions, this homemade Alfredo sauce is a definite winner. It only requires eight simple ingredients, unlike the jars you find on supermarket shelves. We love using this sauce over pasta, as a topping on our Chicken Alfredo Pizza (which I often include in my frugal menu plans), mixed with tomato sauce as a bread dip, or in our favorite Applebee’s Spinach Dip.
Freezing Alfredo Sauce
Can you freeze Alfredo sauce? Absolutely! I frequently freeze this homemade “healthy” Alfredo sauce. In fact, I often double the recipe to save time and freeze the excess for future use. The consistency may change ever so slightly, but it’s negligible.
