Finally the chilly weather is on its way out and we can enjoy the brighter, sunny days of summer.

I don’t know about you, but this past winter was cold and I am ready for flip flops, tank tops and shorts.

We have been spending more and more days on our screened porch.

We love eating dinner outside and this dish is perfect for a light summer dinner because it’s healthy and delicious.

Cooking in parchment paper is one way to cook fish when you’re cooking indoors.

But aluminum foil is the answer when you’re grilling. Grilled grouper in foil is easy to make and easy to clean up.

What does grilled grouper taste like?

Grouper is a firm white fish that is flaky and moist with a distinct mild flavor. It’s flavor is similar to grilled bass or halibut.

Is grilled grouper a fishy fish?

No. This fish is mild and appeals to just about everyone. It is readily available in Florida as well as in fish markets around the nation.

This simple grilled grouper fish recipe takes 10 to 12 minutes from grill to plate.

A sprinkle of Italian herbs and a little olive oil and fresh lemon juice is drizzled over the fresh grouper. The fish is steamed in a foil pouch in its own juices and delivers great flavor.

Grouper is an easy to make white fish that is mild in flavor and available just about anywhere. If you can buy it local, it’s a keeper.

You just can’t mess this up!

I used an Italian seasoning, but any mix of dried oregano, basil, rosemary, garlic salt and parsley will do. It’s delicious sprinkled on fresh grouper.

How to pick the freshest grouper

    • If you are selecting grouper from a local fish market, near the shore, use the smell test. If it’s fishy smelling, skip it.
    • It should be moist and first and spring back when you touch it.

    • Check the freezer aisle. My local grocer has grouper fresh frozen.

    • Make sure it’s liquid-free and there is no frost or ice crystals on the fish.

    • Check to be sure the fish is wrapped and packaged well.

This grouper recipe with lemon and herbs is light and delicious and pairs beautifully with my Orzo and Summer Roasted Vegetables and a crisp Sauvignon Blanc.

    A perfect summer dinner!
