Yum Hi guys! I’m super excited about this post. I’ve been combing the web for the very best in quick, plant-based dinners. A lot of people are under the impression that eating healthy has to be a time consuming ordeal. While it does take more effort to prepare an actual meal than it does to stop at fast food, or pop in a TV dinner, the benefits are so worth it! This collection of recipes from some very talented food bloggers will help you put some amazing, healthy food on your table this week, in 45 minutes or less. Your body, your family, and your wallet will thank you! Another bonus to making dinner at home, is that sometimes you have leftovers for lunch the next day! Yay! Most of these recipes are naturally gluten free, and if not they have gluten free options. My mission with this blog is to help as many people as I can, to learn to eat healthfully and to feel supported when making a dietary transition. This recipe can easily be made gluten free by subbing the soy sauce for tamari (or GF soy sauce) and using a GF pasta, that’s it! These amazing bean balls look so much like the real thing, it’s incredible. Can’t wait to try this one!

This recipe is one of the most popular recipes on my blog, and one of my favorites! It tastes just like take out, but it takes even less time than going for take out, and is way healthier! Savory, chewy, smoky portabello mushrooms fill in amazingly well for beef in this traditional recipe.

17. Sloppy Lentil Sandwiches
I would recommend making these ASAP! Schar Bakery has amazing little, gluten-free, ciabatta rolls that would work great for this recipe! Sometimes I can find them in the supermarket, and sometimes I order from the company and freeze them. Either way, I have plans for these sandwiches! You can also get them on Amazon.

18. Vegan Bibimbap
‘Bibimbap’ is a Korean word for ‘mixed rice’, and in this case, the rice is mixed with a lot of yummy stuff! Tofu, veggies, and spices to be more specific. The pictures of this recipe seriously have me so hungry!!! Make this, and then you can impress your friends when they ask you what you’re eating, and you just say ‘bibimbap’, like ‘you don’t even eat bibimbap?’

OMG! Really, it’s hard to believe that with so many incredible recipes out there (like this one!) that anyone would think that eating plant based meals is hard, or makes you feel deprived! Make the Gluten Free version of this by omitting the seitan and using all mushrooms, and serving on GF bread or wrapped in greens or GF tortillas like a wrap!
