There’s nothing better than a forkful of salty, crispy diced potatoes, dipped in ketchup, or even Ranch dressing.
Before I bought an Air Fryer, I used to pan fry my diced potatoes and can I tell you the oil splatters and grease burns I suffered for this tasty treat?! {OW}
Not only is it less dangerous to cook in my Air Fryer, I love that my favorite foods actually become healthier when prepared this way!

What I love about this recipe is it makes cooking diced potatoes not only easier, but tastier. (Oh and try them with these Air fryer hamburgers, they’re delicious.)

Diced Potatoes in Air Fryer Ingredients
- 2 cups russet potatoes, cleaned and diced
- 1 tablespoons of olive oil
- 1 teaspoon garlic powder
- 1 tablespoon dried parsley
- 1 teaspoon seasoned salt
- ½ teaspoon paprika
- ¼ teaspoon ground black pepper
How to Cook Diced Potatoes in Air Fryer
Step 1
Cube potatoes and add to medium bowl.

For an easy way to dice potatoes, slice them in half length-wise and then place the flat side facing down on the cutting board to then be diced with a chef’s knife. If you want a smaller dice, then do one more long-wise cut parallel to the half cut you made first before cross cutting into diced potato pieces.
Step 2
Drizzle the cubed potatoes with olive oil and toss to coat.
Step 3
Combine spices in a small bowl mixing them completely.
Step 4
Sprinkle about half of the spices over the diced potatoes and toss to coat.
Step 5
Add remaining spices and toss to coat.
Step 6
Preheat Air Fryer to 400 degrees F for 4-5 min.

Add cubed potatoes to air fryer basket and cook for 15 minutes or until golden brown.
Step 8
Remove and serve immediately with ketchup or your favorite dipping sauce.

Yes! One of the hardest parts of living gluten free has been the realization that most restaurant potatoes are not safe-especially when a deep fryer is involved.
Some restaurants have dedicated gluten free fryers, but many do not. Cooking my favorite potato recipes at home is the only way to guarantee zero cross-contamination.

Yes! In fact, we love this diced potato recipe using red potatoes instead. They turn out a little juicier with a different level of crispy on the outside. Be careful when you are cleaning the red potatoes to not remove all the skin while scrubbing! That red skin helps keep the outside crispy in the air fryer and lends flavor and nutrition.

Serving crispy air fryer diced potatoes is easy. Add them to a plate with an entree like a casserole for dinner or a serving of scrambled eggs for breakfast.
They are best eaten warm from the air fryer and tend lose their crunchiness if left out too long. You can serve from a heated buffet server or warming tray, but if left too long the potatoes will get soggy.
Storing and Reheating Air Fried Diced Potatoes
If you have leftover diced potatoes, let them cool and then store in an airtight container like a ziploc bag in the fridge for up to 3 days.
To reheat, place back into the air fryer at 400 degrees F for 4-5 minutes or until they are fully hot and crispy.
