Ingredients for Flour Dumplings

  • 2 cups All Purpose Flour, sifted
  • 2 1/4 teaspoon Salt, divided and sifted
  • 1/4 cup Fine Yellow Cornmeal, sifted
  • 6 2/3 cups of Water, divided

Ingredients for Cornmeal Dumplings

  • 2 cups All Purpose Flour, sifted
  • 2 teaspoon Salt, divided and sifted
  • 6 2/3 cups of Water, divided

Instructions

  1. Pour 6 cups of water and 1 1/2 teaspoon of Salt into a large pot. Cover and bring to a boil.
  2. In a large bowl, sift the flour, fine yellow cornmeal (if you are adding it) and remaining salt. Whisk together.
  3. Then slowly add the remaining 2/3 cup of water to the dry ingredients mixture and knead, until it is formed into a dough. If the dough is too sticky, add a tablespoon of flour as you knead the dough. If the dough is too dry then add more water, a teaspoon at a time.
  4. Break into pieces to form small balls and then press between your palm to form a disc. If you want to make the spinners shaped dumpling like Festivals, then roll each ball between the palm of your hands to form cigar like shape.
  5. Add the shaped dumplings into the pot of boiling water, stir and then cover with a lid. Allow to cook for about 15 to 20 minutes. Be careful to watch the pot, so it doesn’t boil over with the lid on. Also, stir with a spoon, so the dumplings don’t stick to the bottom of the pot.
  6. Carefully remove cooked dumplings with a slotted spoon and serve hot.

Notes:

  • You can add the yellow cornmeal or just do the plain flour all by itself. The choice is yours.
  • When kneading the dough, if it is too sticky, add a tablespoon of flour to it and if it is too dry, add a teaspoon at a time to the dough.
  • Stir the dumplings with a spoon as it cooks, to avoid them from sticking to the bottom of the pot.
