Fried boiled eggs are buttery, crispy and so delicious. They are wonderful as a snack, for breakfast, or as a salad topping.

Plain hard-boiled eggs are not bad. On the contrary. They are delicious and they make the perfect low-carb snack. But they are a bit boring. This recipe certainly takes them to a whole new level.

Indeed, fried boiled eggs are surprisingly delicious. Or maybe it’s not so surprising after all. Take tasty hard-boiled eggs and cook them in butter until browned and crispy. Of course they’re going to be yummy!

The perfect snack!

I love hard-boiled eggs. I love them plain, with just a sprinkle of salt and pepper. 🥚 And I love them topped with a variety of toppings – mayonnaise, mustard, sour cream, salsa, or hot sauce. Obviously, I love them deviled (who doesn’t?).

I make a dozen hard-boiled eggs twice a week for my family of four, so we can always have one or two if we’re hungry between meals. Frying hard-boiled eggs in butter makes them especially good. In fact, they are one of my favorite keto snacks!

The ingredients you’ll need

You’ll only need a few simple ingredients to make this tasty snack. The exact measurements are included in the recipe card below. Here’s an overview of what you’ll need:

Hard-boiled eggs: They should be halved lengthwise. And if you use my tutorial for how to boil eggs, you should keep them in the water for the full 12 minutes so that the yolks are fully cooked.

Butter: Salted or unsalted, it’s up to you. I usually have unsalted butter in the fridge (for my frequent baking) so that’s what I use in this recipe.

Salt and pepper: Just a pinch. Or simply salt to taste.

How to make fried boiled eggs

It’s easy! Scroll down to the recipe card for the detailed instructions. Here are the basic steps:

Take boiled eggs, cut them in half, and saute them in butter on both sides until golden brown. They come out so delightful: warm and buttery, soft yet crispy.

I season them very simply, with salt and black pepper. Paprika or even smoked paprika (one of my favorite spices) would probably enhance their flavor. But I find it unnecessary.

How to serve them?

Fried boiled eggs make a perfect snack or a great breakfast. And they are also very good for lunch or dinner, as a salad topping – they’re great with this simple arugula salad and can turn it into a complete meal.

Sometimes I make a cobb salad and use these eggs instead of the old boring hard-boiled eggs. It’s a really nice variation on the classic recipe.

Can you keep leftovers?

You can, for 3-4 days in the fridge, in a sealed container. But if you’ve used hard-boiled eggs that already spent a few days in the fridge, take that into account. Reheat the leftovers very gently, in the microwave on 50% power.

More tasty things to do with hard-boiled eggs

My favorite is these deviled eggs. I make them with Greek yogurt and they are so creamy and flavorful.

Another tasty recipe is this egg salad. I like to grate the eggs by hand using a box grater. It makes for a great texture.

Finally, these baked Scotch eggs are a bit more labor-intensive but once they’re ready, they are such a wonderful snack. They are also fun to make!
