I’ve been on a pickling craze lately! I used to buy jars of pickle slices, Italian giardiniera, and hot peppers at the grocery store, but once you started pickling your own produce, there’s no going back! Now I make my own Italian Pickled Vegetables (Giardiniera), pickled green beans, Mexican hot carrots, and many other types of pickled veggies. I keep a little stockpile in the fridge and we eat them on/with our sandwiches, burgers, cheese & cracker platters, and more.
As I’ve mentioned in other posts, my 8-year old is a spicy food fanatic. My husband and I also love spicy food, so while I still make my Pickled Hot Banana Peppers & Onions because they’re fantastic on sandwiches and cheese boards, the Flavorful Eats house has bumped up the heat a notch with these Habanero Garlic Pickles. To give you an idea of how hot my son likes his food, he tops his burgers with pickled jalapenos, these Habanero Garlic Pickles, AND the habanero peppers! Habanero Garlic Pickles are salty, vinegary, spicy, garlicky, and an absolute must-have on burgers and sandwiches. I like to make little snack plates with cheese, salami, crackers, and these pickles. They’re also a great addition to homemade tuna salad!
All you need to make Habanero Garlic Pickles is: cucumbers (more on those later), lots of garlic, a couple habanero peppers (1-3 depending on how hot you like it), pickling spices, a pinch of sugar, water, and white vinegar. They’re a cinch to make and very inexpensive too!
I love to use “snacking cucumbers” or “Persian cucumbers” for the majority of my pickles. I do use traditional cucumbers from time to time, but the snacking or Persian varieties have less seeds and seem to stay crunchier longer.

- If you need jars for pickling, these are the jars I use most frequently. You can get them HERE from Amazon.
- These pickles should last several weeks in the fridge. Time is a relative thing in the pickling world. While the veggies are in a nice acidic environment that wards off bacteria, it’s not the same as canning or fermenting, where the jarred goods last a very long time.
