Alex and I make it often: it adds just the right touch to our Vegan Poke Bowls. Luckily it takes literally 2 minutes to make: and it stores in the fridge for months! Here’s how to make it.

What’s in spicy mayo?
Spicy mayo is just two main ingredients: mayonnaise and Sriracha! What’s Sriracha? It’s a tangy Asian-style hot sauce, and you 100% need this bottle in your refrigerator if it’s not already. You can whip up this sauce in just 2 minutes to add umami and richness to so many different foods. Here we added a third optional ingredient to increase the savoriness. To comes out so full of flavor, you only need a little drizzle when you serve it. Here’s what you’ll do:
- Start with ½ cup mayonnaise. Use any type, vegan mayo, or Kewpie mayo for the most authentic flavor (see the section below).
- Stir in about 1 ½ tablespoons of Sriracha hot sauce. Taste and see if you’d like it hotter. A range of 1 tablespoon (not very spicy) to 2 tablespoons (solidly spicy) is a good range, but if you’d like it even spicier, go right ahead!
- Add ½ tablespoon soy sauce (optional) to add even more umami. Then stir!

Storing spicy mayo

When you stir together the sauce, it will be slightly runny in texture. This works perfectly as a drizzle for bowl meals like a Poke Bowl. If you’d like the texture to be thicker, refrigerate it for about 2 hours until it’s cold. Spicy mayo stores for about 3 to 4 months refrigerated, so you can make up a big batch and then use it when the craving strikes!

Ways to use spicy mayo
There are so many tasty ways to use spicy mayo! Here are our favorites:
- Poke bowls. Try this Hawaiian bowl meal with a drizzle and it’s heaven! Go to Poke Bowl or Vegan Poke Bowl.
- Sushi. Use it for dipping! Use store-bought or try our Maki Sushi recipe.
- Burgers. Our Perfect Black Bean Burger is even more perfect with this sauce.

To be totally authentic, use Kewpie mayo
Want that signature flavor that’s served with sushi? You’ll need a special type of mayo: Kewpie! What’s Kewpie mayo? It’s a Japanese style of mayonnaise that’s even richer and creamier than American. It uses rice vinegar instead of distilled vinegar.

Spicy mayo variations
Finally, here are a few variations you can do on the spicy mayo concept:
- Lime mayo. If you are also serving people who can’t take the heat, make a batch of lime mayo! Just add lime juice instead of the hot sauce: it adds all of the zingy flavor without the heat.
- Latin-style / Mexican spicy mayo. Substitute Cholula hot sauce for the Sriracha, and you’ve got a Latin style spin.
- Yum Yum sauce. Ok, this isn’t spicy at all. But it’s a Japanese-style condiment made of mayo that has a similar appearance and flavor. Try our Yum Yum Sauce.
