We love stir fry around here and I decided it was about time I come up with my own sauce recipe since the packets we were buying just weren’t cutting it. After a few different tries, this recipe has come through as a family favorite and I wanted to share it. I’ve partnered with GreenPan to give you our version of chicken stir fry and the chance to take home some ceramic cookware, too!
Chicken stir fry has always been a favorite in our house, but I knew the sauce packets we were buying were loaded with MSG and preservatives. Since we usually try to buy organic and natural ingredients, I realized how silly it was to be dousing those in MSG-filled sauce. I started experimenting with ingredients and finally made a stir fry sauce that our family loves! Then we added it to our typical chicken stir fry meal and it’s been a staple ever since.
Chicken Stir Fry
The first step in a great chicken stir fry is the base. You can make rice, noodles, or even zoodles! We don’t buy rice noodles often but they’re a fun treat for stir fry and you can usually find them near the rice at your grocery store. This particular brand is Non-GMO, gluten free, preservative and trans-fat free. They are loaded with carbs, though, so if you are low-carb, zoodles would be a better option!
Boil the water and add the rice noodles, cooking for 4-6 minutes on medium until they’re tender. Drain the noodles and set aside.

While the noodles are cooking, cut your chicken breasts into thin slices.
Heat oil in a frying pan and add chicken sprinkled with salt, heating until fully cooked white. While the chicken is cooking, thinly slice your vegetables and cut up the broccoli.
You can really add any available vegetables to stir fry, but some of our favorites are included in the recipe. We always add a variety of peppers, broccoli, zucchini, and mushrooms. If we have other veggies in the fridge that need to be used up, I throw those in too. Feel free to add or remove items you love or hate!
Once your chicken is fully cooked, add all of the vegetables to your frying pan. If you need to add a little olive oil, go ahead! Cook these for 6-8 minutes or until they’re as soft as you like them.
While the vegetables are cooking, whisk together all the sauce ingredients in a bowl. Once the veggies are done, add the sauce to the frying pan and bring to a boil. You may notice that our recipe doesn’t have soy sauce. We prefer to use organic liquid coconut aminos because the sodium content is much lower.
Once the sauce comes to a boil, reduce the heat and let everything simmer for a good three to five minutes. Serve the stir fry on top of the noodles, and sprinkle with sesame seeds for a nice finish!
I’m so happy with how this chicken stir fry turned out, and a lot of it had to do with the high quality, ceramic cookware I used! GreenPan boasts non-toxic, non-stick ceramic cookware and it does NOT disappoint.
GreenPan Ceramic Cookware
Now, you may be asking, why ceramic? SO many reasons! First off, I’m embarrassed by the fact that we’ve cut out chemicals in almost all other areas of our life, but cookware wasn’t one of them. I was still using outdated, scratched up pots and pans from our wedding (which was nine years ago!). I’ve been seeing more concerning facts about the toxic properties of non-stick cookware and after researching, ceramic seems like a safe, non-toxic option!
GreenPan’s ceramic non-stick coating, Thermolon™, is safe for the environment and doesn’t use any PFOs or PFAs during production. Also, they’re free of lead and cadmium! I got to try out the Chatham 12″ Ceramic Non-Stick Fry Pan and the Chatham 3-Quart Covered Saucepan and both are my new go-to for cooking. The Chatham Fry Pan is the perfect size for cooking family meals and the saucepan is nice sized. Both are incredibly easy to wash!
Just look at the delicious meal that came from GreenPan’s cookware! I feel so much better knowing that my kids are eating from pots and pans that can’t emit toxic fumes or release chemicals into their food. It’s terrifying to think what they’ve been exposed to already, but when you know better, do better, right?
I’m so excited to keep cooking with my GreenPan saucepan and fry pan. They conduct heat so well that my water boiled much faster than usual. I can’t sing enough praises for GreenPan products! Our generous friends at GreenPan are offering one lucky reader their very own 12″ Ceramic, Non-Stick, Non-Toxic Fry Pan. Enter using the Giveaway Tools form below.
