If you read our Japanese Spinach Salad entry, you’d know how much we love our spinach! Spinach is readily available throughout the year, healthy, and very easy to cook with, so we do have quite a few recipes here on LCA for this wonderful super vegetable! This garlic spinach stir fry recipe is the newest addition to our recipe collection and was inspired from my Mother-In-Law’s spinach stir fry!

Her version isn’t quite low-carb/keto friendly, so we had to make some minor adjustments, but still tastes as good and is super easy to cook!
We start by simply mincing up some garlic. From there, we add the spinach into a fry pan with hot neutral cooking oil and cook that for a minute or so. Once the spinach is cooked, we add the minced garlic, sprinkle in some salt, and top with some bonito flakes. That’s it!
Now as a superfood, spinach has a range of health benefits. It’s packed with vitamins and minerals that aid in providing bone health, preventing cancer, and improving blood glucose control in people with diabetes. In addition, spinach is high in fiber and water, both of which help to prevent constipation and promote a healthy digestive tract.
With all these amazing health benefits, it’s no wonder spinach is considered a superfood!
