This marshmallow cereal treat is my go-to recipe when I need to whip up something at the last minute or use up leftover Rice Krispies or Cocoa Krispies. Sometimes I alternate the chocolate version with these Fruity Pebbles Rice Krispie treats.

I even have a s’mores cereal treat recipe that’s pretty tasty and perfect for parties or when you don’t want to bust out the fire pit. PS…if you like s’mores I also have a skillet dip that is to die for.

While there may be a ton of recipes out there, my favorite thing about this one is that you don’t have to turn the stove on. That’s right – we are melting everything in the microwave and cleanup is a breeze.

Ingredients Needed

• mini marshmallows – make sure they are fresh
• unsalted butter – do NOT use margarine!
• chocolate chips – use a high quality chocolate (dark, milk, or white)
• unsweetened cocoa powder – this is the brand I use
• Rice Krispies cereal
• Chocolate jimmies sprinkles
• Nonstick cooking spray

How to Make the Best Chocolate Rice Krispie Treats

Grease a large spoon and a 10 x 7 baking pan with nonstick spray and set aside.

In a large microwave safe bowl, combine the butter and marshmallows. Microwave for 2 minutes, remove from microwave and stir constantly until smooth.

Immediately add the chocolate chips and stir until melted.

Mix in the cocoa powder until incorporated.

Fold in the cereal and stir until all ingredients are mixed well.

Pour into the baking pan and spread evenly. Press gently with the spoon until the treats are packed. Tip: place a sheet of parchment paper over the treats before pressing them down.

Top with sprinkles and press them down into the treats.

Cover with plastic wrap and let them set for 3-4 hours before cutting.

Variations

I like using dark chocolate because it has a richer taste but you can use milk chocolate or white chocolate chips if preferred.

For holidays or special occasions, you can dip the ends in chocolate and add sprinkles.

As a fun party treat, cut the rice krispie bars in smaller pieces and add sticks. Wrap in cellophane and tie on a bow using decorative ribbon.

How to Store Cereal Treats

Store in an airtight container on the counter for up to 3 days. That’s when they are the softest but ours never last beyond a day.

Can You Freeze Homemade Rice Krispie Treats?

In the freezer they will stay fresh for about 1 month. Wrap them in a couple layers of plastic wrap, then transfer to a freezer container or freezer bag.
