Easy Air Fryer Roasted Carrots
If you are looking for a delicious side dish recipe that’s fast, air fryer carrots are the recipe. Roasting on high heat naturally caramelizes the sugars in the fresh carrots, giving them a wonderful flavor.
Using the air fryer allows the carrots to cook with just a spritz of olive oil spray, saving any big calories from lots of oil or butter.
These carrots come out fork tender with slightly crispy edges. They are a perfect easy side dish for a holiday meal because they don’t need the oven (and have amazing flavor).
Pair them with roast chicken or meats for an easy roast dinner.
What makes this skinny?
- Olive oil spray is used instead of olive oil for a low fat recipe
- A very small amount of maple syrup is needed
- Vegetables and spices are the only other ingredients
- Cooking in the air fryer is a great cooking method to keep recipes skinny
Recipe Ingredients + Notes
Carrots. Use large carrots (regular carrots not baby carrots) and choose carrots of similar sizes so they’ll cook in the same amount of time.
Rinse, peel with a vegetable peeler and slice them on the diagonal into ¼-inch thick slices.
Olive oil spray. This adds a little bit of olive oil to help with roasting. Avocado oil can also be used if preferred.
Maple syrup. Use pure maple syrup (not pancake syrup).
Garlic powder. This adds garlic flavor.
Salt. We recommend kosher salt which is a less salty tasting salt.
Black pepper. Freshly ground black pepper if possible.
Fresh thyme. Sprinkling on fresh herbs before serving add another layer of delicious flavor.
Variations
Add some cinnamon or nutmeg! For more sweetness and wintery flavor add some cinnamon and nutmeg to the mixture before tossing the carrots.
Use different color carrots. Mixing colors of carrots makes an interesting visual presentation!

Every type of Air Fryer cooks slightly differently. Check the carrots after cooking and add more time if needed.
How to Make Air Fryer Carrots – Step-by-Step
STEP 1. Preheat the Air Fryer
Preheat the Air Fryer to 400 degrees fahrenheit for 5 minutes.
STEP 2. Combine ingredients
In a large mixing bowl combine the cut carrots (photo 1), maple syrup, garlic powder, salt and pepper. Spritz with olive oil spray. Toss carrots to coat.
STEP 3. Cook
Place carrots in the air fryer basket (photo 2). Cook at 400 degrees for 10 minutes; stir halfway through (photo 3).
Oven roasted carrots

- Preheat the oven to 400 ˚F
- Follow STEP 2 above.
- Place the coated carrots in a single layer on a lined (parchment or foil) baking sheet. Cook at 400 ˚F for 10 minutes stirring halfway through cooking.
- Serve in a serving dish, garnish with fresh thyme.
How to Store
The carrots taste best right out of the air fryer (or oven). Leftovers can be kept in an airtight container in the refrigerator for up to 3 days.
