This recipe for Vegan Parsley Arugula Walnut Pesto is maybe my favorite version of the condiment ever. Walnuts give it a perfect texture while the greens come together to pack major flavor into even the smallest bite. It takes just a couple minutes to make and only one taste to fall in love!

Walnuts add a creamy texture and incredibly unique flavor to this pesto recipe. They also pack a nutritional punch! Walnuts are super filling, offer plant-based protein and can help control blood sugar levels. They also contain omega-3 essential fatty acids. Omega-3s may lower your overall risk of heart disease, according to the Academy of Nutrition and Dietetics, and they reduce joint pain and improve brain function and development. Walnuts are also a good source of magnesium, which can lower blood pressure. I’m always trying to incorporate more walnuts into my routine.

Arugula is SO good for you! It’s high in calcium, potassium, folate, and vitamins C and K. It’s good for your immune system and your blood health. If you don’t have arugula you can just substitute more parsley. This is a totally flexible recipe; you could really use almost any fresh green herb you have on hand. I do love the combination of the fresh herby parsley with the subtle peppery taste of the arugula.
