- Repeat the process with the red peppers and onions, pulsing each separately until finely chopped. Measure out two cups of each and add them to the bowl with the cucumbers.
- Stir in some kosher salt, and cover the mixture with ice water. Let it sit for two hours.
- Drain the vegetables, rinse well, and drain thoroughly.
- In a large stock pot, combine sugar, vinegar, celery seed, and mustard seed. Bring the mixture to a boil.
- Stir in the vegetables and simmer for 10 minutes.
- Spoon the hot relish into hot pint jars, leaving a ¼ inch space.
- Top the jars with lids and rings, tightening them by hand.
- Place the jars into boiling water and process for 15 minutes.
- Remove the jars and set them aside to cool completely.
This recipe should yield 3-4 pints or 6-8 half pints of delicious sweet pickle relish. If using half pints, adjust the processing time to 10 minutes.
