Crafting the Perfect Sweet Pickle Relish

Making sweet pickle relish is easier than you think. Follow these simple steps to create a batch that will impress your friends and family:

  1. Start by washing and drying your cucumbers and red peppers.
  2. Cut the cucumbers into chunks.
  3. Remove the stems, seeds, and membranes of the red peppers, and cut them into chunks as well.
  4. Peel the onions, removing the ends, and cut them into chunks.
  5. Place the cucumbers in a food processor and pulse until finely chopped. Measure out four cups of the chopped cucumbers and transfer them to a large bowl.
  6. Repeat the process with the red peppers and onions, pulsing each separately until finely chopped. Measure out two cups of each and add them to the bowl with the cucumbers.
  7. Stir in some kosher salt, and cover the mixture with ice water. Let it sit for two hours.
  8. Drain the vegetables, rinse well, and drain thoroughly.
  9. In a large stock pot, combine sugar, vinegar, celery seed, and mustard seed. Bring the mixture to a boil.
  10. Stir in the vegetables and simmer for 10 minutes.
  11. Spoon the hot relish into hot pint jars, leaving a ¼ inch space.
  12. Top the jars with lids and rings, tightening them by hand.
  13. Place the jars into boiling water and process for 15 minutes.
  14. Remove the jars and set them aside to cool completely.

This recipe should yield 3-4 pints or 6-8 half pints of delicious sweet pickle relish. If using half pints, adjust the processing time to 10 minutes.
