Red cabbage, you certainly know, but have you ever tried pointed red cabbage, also called Kalibos cabbage? It is actually a cross between red cabbage and pointed cabbage. If you’ve never tried it before, here’s a simple recipe for a Pointed Red Cabbage and Feta Salad.
If you can’t find a pointed red cabbage, this salad goes very well with normal red cabbage as well.
A few lines about pointed red cabbage
Pointed red cabbage looks like pointed cabbage and has a cone shape. Its color is purple, almost pink, a little lighter than red cabbage. To taste, pointed red cabbage is slightly sweeter than red cabbage, so it’s particularly good to prepare it in a salad.
It’s still a rare vegetable to find so if you don’t have one, just use red cabbage.

Massage the cabbage to prepare it for a salad!
Yes, you read that right. In order to make the cabbage more digestible, when it is prepared in salad, it is important to massage it before.
To do this, wash and cut the cabbage finely, then add a drizzle of olive oil, vinegar or lemon and a pinch of salt. It’s not about seasoning the cabbage, but the acidity of the vinegar or lemon along with the salt will help the cabbage to get tender.
Then with your hands squeeze the cabbage for several minutes. The cabbage should become more tender and bring out some liquid. Continue this step until the cabbage is lost at least 30% of its volume.
When massaging red cabbage, I advise you to wear gloves for this step.

This “massage” is not reserved for red cabbage only but it is recommended for any recipe for salad made from raw cabbage. I also mention it in my recipe for Kale, Apple and Feta Salad for example.
