- Although optional, adding cheese to the sauce enhances its richness and deliciousness.
- If the sauce appears too thick when done, simply add more chicken broth to achieve the desired consistency.
- This sauce keeps well in the fridge for at least a week. Unfortunately, I can’t tell you if it freezes well because there’s never any left to freeze! I’ll update the post as soon as I have the chance to test freezing it.
- If you have leftover sauce, you can reheat it on the stovetop over low heat, stirring it every few minutes.
- Microwaving is another option, but be sure to heat it in 30-second intervals, stirring after each interval.

How to Make Creamy Sour Cream Enchilada Sauce
Gather the following: a medium saucepan, whisk, and rubber spatula.
Assemble the ingredients: flour, butter, sour cream, chicken broth, garlic powder, onion powder, and salt. The only missing ingredient in the picture is the cheese.
On medium heat, melt 3 tablespoons of butter in the saucepan, ensuring it doesn’t brown. (A)
Add 3 tablespoons of all-purpose white flour. (B)
Whisk the mixture for approximately 1 minute until it thickens. (C)
Add chicken broth, salt, garlic powder, and onion powder.
Whisk everything together until smooth and well-incorporated. Continue whisking until the mixture comes to a slight boil and thickens, which should take around 5 minutes. (E)
Crucially, remove the saucepan from the heat and let it cool for at least 5 minutes to prevent curdling.
Add the sour cream. (F) Stir with a spatula until it becomes smooth.

Over medium-low heat, stir the sauce with a spatula until the cheese melts completely. This process usually takes around 3 minutes. (H)
If you feel the sauce is too thick after cooking, you can simply thin it out by adding more chicken broth, depending on your intended use.
