This past weekend, I visited my daughter for dinner, and I was immediately intrigued by the aroma in the kitchen. I asked her what smelled so good, and she told me about these Chicken Leg Quarters that she makes for her family. Her secret to this flavorful chicken was the wet rub she used. It was so delicious that I asked her if I could share this recipe with you guys, and fortunately, her answer was YES!
This wet rub consists of smoked paprika, chili powder, black pepper, salt, garlic powder, Italian seasoning, and olive oil. These ingredients are packed with flavors and are key to what makes these Chicken Leg quarters mouth-watering.
To make the dry rub, I will give you measurements in the recipe card as a reference to follow, but the great thing about this rub is that you can add as much or as little of the ingredients according to your liking. For instance, I love the smoky flavor of paprika, so I added more to my mixture. You can use this on a whole chicken for baking or grilling, or you could even use this on vegetables. To make the wet rub combine all the spices in a small bowl and add the oil. Save some of the rubs for the vegetables.

How to Make The Most Flavorful Baked Chicken Leg Quarters
Step 1: Pat dry the chicken and then proceed to rub the mixture on the chicken. I use my hands, but you can use gloves if it is more comfortable for you. With my fingers, I go inside the skin to season the whole chicken leg quarter.
This can be messy, but I promise you it is worth it.
Step 2: Once your meat is coated with the wet rub, place them in a baking sheet and bake them in the oven for about 40 minutes to an hour at a 400-degree Fahrenheit.

Step 3: Cut all the vegetables and place them in a baking pan. Using the rest of the seasoning, add that to the vegetables. Please place them in the oven after the chicken has cooked for about 20 to 25 minutes because these vegetables will not take long to cook. You can definitely cook the chicken and the vegetables together if you’d like.

Tips:
- One important and I will say an essential step to achieving crispy skin in these chicken legs is to pat dry the chicken before adding the rub. Patting the chicken leg with a paper towel to remove the excess moister will help the rub stick to the meat.
- I also suggest having the chicken room temperature, just a few minutes out of the fridge before seasoning. This will guarantee the meat to cook evenly.
- When grilling, meats that are seasoned with rubs tend to burn when it contains sugar in them. No worries about this rub. It doesn’t contain sugar.
