    The USDA made several significant revisions to the recommended cooking temperatures for meats on May 24. What you need to know is as follows:

    • Cooking Whole Cuts of Pork: With the addition of a three-minute rest time, the USDA has dropped the recommended safe cooking temperature for whole cuts of pork from 160 oF to 145 oF. Cook pork, roasts, and chops to 145F on a food thermometer before removing them from the heat source and allowing them to rest for three minutes before carving or eating. As a result, the product will be both safe and of the highest quality, juicy and soft.
    • Cooking Whole Cuts of Other Meats: The safe temperature for beef, veal, and lamb cuts remains at 145 degrees Fahrenheit, but the FDA has added a three-minute rest time to its cooking recommendations.
    • Ground Meats: This adjustment does not apply to ground meats such as beef, veal, lamb, or pork, which should be cooked to 160 degrees Fahrenheit and do not require resting.
    • Poultry: The safe cooking temperature for all poultry products, including ground chicken and turkey, remains constant at 165 degrees Fahrenheit.

    “Rest time refers to the time it takes for a product to reach its ultimate temperature after being withdrawn from a grill, oven, or other heat source.” The temperature of the meat remains steady or rises for three minutes after it is withdrawn from the heat source, destroying hazardous microorganisms.

    • Cooking pork slices to 145F with a three-minute rest period is exactly as safe as cooking them to 160F, the previously suggested temperature, with no rest time. The new cookingrecommendations are based on the agency’s criteria for cookedmeat products produced in federally inspected meat businesses, which call for a three-minute rest time to ensure a safe product.
    • Consumers will be more likely to recall the temperature at which the meat is safe to eat if there is a single time and temperature combination for all meat.

    The food thermometer should be placed in the thickest area of the food. It should not come into contact with bone, fat, or gristle. Start testing the temperature near the conclusion of the cooking process, but before you think it’s finished. Before and after each usage, make sure to wipe your food thermometer with hot soapy water.

    • Keep in mind that the amount of time required depends on the size of the roast. We’ll be using a 3-pound pork loin in this dish, which will take roughly 50 to 60 minutes in a 375 F oven. This equates to approximately 20 minutes per pound. Some ovens may require a few minutes more.

    • Reduce the temperature of your oven to 350 degrees F and cook your roast for another 20 minutes per pound of meat. It does take some time. But believe me when I say that the wait is well worth it!
    • Remove the pork loin from the oven once it has reached an internal temperature of 145 degrees F. Then, loosely cover the roasted pork loin with foil and let aside to rest for about 10 minutes. This is another another crucial step in keeping the fluids inside the meat where you want them to be!! Patience is a valuable asset.

    My family comes running to the kitchen every time I make this pork loin roast recipe, practically asking for supper to be ready. The long roasting time causes the aroma of excellent pork to pervade the entire home. My oldest son often remarks that the last 10 minutes of “meat rest time” seem to go on forever!

Cooking the pork tenderloin at 425 degrees F speeds up the cooking process and keeps it from drying out.

    Step 3: Rest the Pork Tenderloin

    Finally, allow the pork tenderloin to rest for 8-10 minutes before serving; if you omit this step and cut into it right away, the juices will flow out, leaving you with dry meat.
